Jon Mortimer’s 25-year career can best be summed up as a search for food with a sense of place. As a professional chef, Jon sees himself as a steward of the special gifts brought to the restaurant by the quality-oriented farmers and ranchers with whom he’s forged lasting relationships. It is Mortimer’s philosophy that through this unique partnership with producers, combined with the culinary talent of his kitchen staff and service team, memorable dining experiences are created.
